Guided by the landscape and self-sufficiency, Birchwood is focused on the flavours found in the natural world. Our vegetables, grown by regenerative principles, are pulled before service or are preserved, cured and bottled to extend the season and create a bountiful evolving larder to cook from. Our menus feature local cheeses, dairy, wines, spirits, and beer, while many ingredients, such as mushrooms, brambles, elderberries, wood sorrel, and birch sap, come from our fields and woods.

Birchwood is rooted in a farm-to-table ethos, celebrating sustainability, seasonality, and local craftsmanship. We draw inspiration from the surrounding countryside, with ingredients sourced directly from our own farms, The Small Holding and our butchery Block.
